Ingredients

4 servings
  • 2 canpuy or other dark lentil , washed and drained
  • 4 mediumscallions, finely chopped
  • 1 canartichokes in oil or water ,(if using oiled variety safe half the oil, if using in water variety discard water.
  • 1/2red chilli pepper very finely chopped
  • 2vegetable stock cubes
  • 4 clovegarlic finely chopped
  • 1/4 tspdried thyme
  • 2 tbspolive oil., or reserved oil from can
  • 350 mlwater, adjust to preference of taste after blending .

Steps

  1. 1

    this soup is straight forward, prepare all vegetables

    put all ingredients in pan

  3. 3

    boil gently for about 15 minutes.

    take of heat cool slightly.

  5. 5

    blend until very smooth

  6. 6

    gently heat and simmer for 15 minutes ,stirring it to prevent from setting on bottom of pan .

    I served this with bread croutons, fried apple and soft goats cheese ( or use a vegetarian soft cheese)
