Soto Betawi is the most frequently cooked soto at home. Everyone loves it... especially with added fried beef lung 😋 I've shared this recipe several times on Instagram but never here... I've made two types of Soto Betawi, one with full coconut milk and one with full milk... but the best, in my opinion, is the one with a mix of coconut milk and milk... it's so deliciously savory... you must try it.

Ingredients

  1. 2.2 lbsbeef (tenderloin and shank)
  2. 1.2 inchesgalangal, smashed
  3. 1 stickcinnamon (2 inches)
  4. 4bay leaves
  5. 6cloves
  6. 2 stalkslemongrass, smashed
  7. 6 1/3 cupscoconut milk from 1 coconut
  8. 2 cupsmilk
  9. Oil for sautéing spices
  10. Spice paste:
  11. 15shallots
  12. 8 clovesgarlic
  13. 0.8 inchesginger
  14. 3candlenuts
  15. 1/2 tspcumin
  16. 1 tbspcoriander, toasted
  17. 1 tsppepper
  18. Salt and sugar to taste
  19. Garnishes:
  20. Bird's eye chili sauce
  21. Sliced green onions
  22. Sliced tomatoes
  23. Fried shallots
  24. Emping crackers
  25. Lime wedges
  26. piecesFried potatoes, cut into

Cooking Instructions

    Briefly boil the beef pieces, discard the water. Reboil the beef with 6 1/3 cups coconut milk

    Sauté the spice paste with galangal, bay leaves, cinnamon, cloves, and lemongrass until fragrant. Add the sautéed spices to the beef broth. Bring to a boil, cook while stirring occasionally to prevent the coconut milk from breaking

    Add the milk. Stir. Add salt and sugar to taste. Taste it. Cook until the spices are absorbed and the beef is tender

    SERVING: Prepare a bowl, fill with fried potatoes, and sliced tomatoes. Add beef and soto broth. Sprinkle with fried shallots, emping crackers, and sliced green onions. Serve the soto with the garnishes
