Preheat oven to 160 C/gas 2

Put a little oil in a pan and butter into casserole pot. Toss meat in flour and seal in the pan.

Add onion, vegetables, herbs, tomato puree, wine and stock to the pot and gently stir together.

Season and bring to the boil. Place a lid on top and cook in preheated oven until meat is tender. Approximately 3-4 hours. If meat falls apart easily its ready.

Once cooked turn oven down to 110 C and keep there until ready to eat.
