Gnudi with Swiss Chard and Ricotta

Boil the Swiss chard in a small amount of water. Once cooked, drain well, then let it sit in a colander for about 20 minutes to cool and release more water. Chop coarsely or to your preferred texture.

In a bowl, combine the ricotta, egg, Swiss chard, some Parmesan cheese, a pinch of nutmeg, salt, and pepper. Mix with a fork, then gradually add enough flour to make a dough you can shape by hand or, as I did, use two spoons to form quenelles.

As you shape them, place the gnudi on a well-floured tray. Cook in salted boiling water until they float to the surface. Drain and serve with melted butter and sage.
