soak 4 wood chunks or several handfuls of woodchips in water at least 30 min, drain

spread the ribs on baking sheet or tray, season with black pepper. combine bbq sauce and hot pepper sauce in small bowl. brush ribs with half the sauce. marinate in refrigerator one hour.

prepare grill for indirect cooking. add soaked wood to fire. place foil drip pan in center of grill. fill pan half full with beer.

oil hot grill. place ribs on grill meaty side updirectly above drip pan. grill ribs over low heat, covered, about one hour brushing remaining sauce over ribs two or three times while cooking.
