Ingredients

4 servings
  • 2x 400g tinned tomatoes
  • 6x large cloves of garlic finely chopped
  • 2x tbsp of sugar (castar or normal)
  • 200 mlvegetable stock
  • 2x splash Tabasco sauce
  • 2x splash Worcestershire sauce
  • Salt and pepper for seasoning
  • 250 gmascarpone
  • A fewtorn basil leaves

Steps

  1. 1

    Add tomatoes, garlic, stock and sauces into a pan with salt and pepper. Simmer gently for 5 mins.

  2. 2

    Stir in mascarpone and blend to a smooth soup.

  3. 3

    Simmer for 2 mins.

  4. 4

    Serve with crusty bread and garnish with the basil leaves. Enjoy.
