Eggplant :Preheat a frying pan and fry the eggplants stripes till nicely brown color.

Drain the oil from the fried eggplant add a little salt and pepper then put aside to chill.

Souse : Preheat a frying pan and add the rest of the ingredients.

Cook for 10 min.

Pour the souse over the eggplant.

Put in the fridge for an hour.
