Bruschetta with Spinach and Poached Egg

Sauté the spinach in a pan with oil and chili pepper.

Prepare the poached eggs. Here's how I do it: lay a sheet of plastic wrap on a cutting board and cut one end.

Brush it with a little oil. Take a mug and place the plastic wrap over it, pushing it down slightly. Crack the egg and pour it onto the wrap without breaking the yolk. Then add some sesame seeds and strips of smoked salmon (or whatever you prefer). Gather the corners of the wrap and create a pouch by tying the end.

Prepare a pot of water and bring it to a pre-boil. Place the pouch in the water for 5-6 minutes.

Remove the pouch, take off the plastic wrap, and place the poached egg on the bread where you previously placed the sautéed spinach. Drizzle a little olive oil over the eggs and pepper to taste.

The sardines on the plate next to the bread aren't part of the recipe, but I liked them and added them 😊
