In a small sauce pan, bring 1 cup of water to a boil. Add 1 tsp butter and 1/2 cup of rice. Cover and simmer on low for about 20 minutes, or until almost all the water is absorbed. (**NOTE: these directions are for white rice. Brown rice takes about 45 minutes!**)

While the rice is cooking, heat oil over medium in a large saucepan. Stir in onion and garlic. Cook for a few minutes, until translucent but not brown.

Add tomatoes, beans, oregano, and bring to a boil. Then, reduce heat to a simmer and cover.

Add cooked rice, and let simmer for 5 minutes. Remove from heat and let stand about 5 minutes before serving.
