In a vessel, boil the water. When it comes to rolling boil, add the washed spinach leaves and cook it for 3-4 mins. Blanch rest of the palak in similar way.

After blanching the spinach leaves, add it to a vessel containing cold water.

In a blender, add the blanched spinach leaves and prepare the spinach puree.

In a kadai, heat up the oil and add cumin seeds and hing and crackle. It. Then add the onion and fry it till translucent.

Now add the ginger-garlic paste and fry for 30 sec.

Add the tomato puree to it and fry till cooked properly.

Now add all the spices along with the wheat flour and saute it.

Now add the dahi and cook for less than 30 seconds.

Now add the spinach puree along with salt and sugar and cook it for 5 min.

Add the paneer to it and cook for 2 min.

Switch off the gas and add a pinch of garam masala and the cream and kasoori methi. Palak paneer is ready to serve. Serve it with roti, naan or pulao.
