  2. 1 cupdiced olives
  3. 3 tbspChicken Boullion
  4. 3 tbspOlive Oil
  5. 3 tspsalt
  6. 3 tsppepper
  7. 1 pinchcumin
  8. 2 1/2 packagessazón w/ achiote
  9. 1 canpigeon peas (sub. any small pea or bean)
  10. 5 1/2 cupwater
  11. 4 cuprice (med. grain)
  12. Sofrito
  13. 3 tbspgreen peppers
  14. 3 tbspred peppers
  15. 3 tbsponion
  16. 3 tbspgarlic
  17. 4 tbspGoya Tomato Sauce
  18. 1 pinchcilantro
  19. 1 pinchoregano
  20. 1 tbsphotsauce (optional)
  21. Sazón w/ Achiote
  22. 1 tbspcoriander
  23. 1 tbspcumin
  24. 1 tbsppaprika
  25. 1 tbspgarlic powder
  26. 1 tbspsalt
  27. 1 tbspblack pepper
  28. 1 tbspachiote

  1. 1

    add all ingredients except rice to pot. water last.

  2. 2

    cook to boil on md-high heat. then add rice

  3. 3

    cook uncovered until most water is absorbed. (approx 10 mins) continuosly stirring to ensure rice does not burn.

  4. 4

    add more sazón if needed (use color as guide, should be a dark yellow tone)

  5. 5

    if rice is still hard, add more water and cook additional 10 mins

  6. 6

    when most of water is absorbed, place stove on md-low heat 15-20 mins. stirring continuosly.
