Ingredients

8 servings
  • 5 lbred potatoes, quartered (small-medium size pieces)
  • 1/2 cupolive oil
  • 2 tbspchopped fresh rosemary
  • 1 tspsalt
  • 1 tspcoarse black pepper
  • 1chopped Italian parsley for garnish
  • 3 tbspfinely chopped fresh garlic
  • 2 tsppaprika

Steps

40 mins
  1. 1

    preheat oven to 400*

  2. 2

    in large roasting pan toss potatoes w/olive oil

  3. 3

    sprinkle potatoes w/rosemary, salt, pepper, garlic, paprika

  4. 4

    toss again

  5. 5

    roast in oven for approx 40 minutes or until golden & skin appears slightly crisp

  6. 6

    toss potatoes halfway thru cooking time to assure even roasting

  7. 7

    garnish w/chopped Italian parsley
