Ingredients

  1. 1 cupcooked Basmati rice
  2. 1/2 cupvegetables, cut in cubes (Carrot, beans, cauliflower, green peas etc)
  3. 1/2 tablespoongrated ginger and garlic
  4. 1chopped green chilli
  5. to tasteSalt
  6. 3 tablespoonscooking oil/ghee
  7. 1bay leaf
  8. 1cinnamon stick (2-inch size approx)
  9. 6peppercorns
  10. 4cloves
  11. 4green cardamoms
  12. 1big cardamom
  13. 1-star anise

Steps

  1. 1

    First heat oil or ghee in a wok. Then to this add bay leaf and the whole garam masalas. Stir this till you get a nice aroma.

    Then add grated ginger and garlic. Then to this add the chopped green chilli and saute it for approx a minute or so.

    Add all the vegetables and saute it for a while on medium to low heat.

  4. 4

    Now to this add salt and stir well. Cover the lid and cook it until the vegetables are 80% done.

  5. 5

    Now add cooked rice and stir gently. Cover the lid and cook for 2-3 minutes more in a low flame.

  6. 6

    Finally, open the lid. Carefully fluff the rice and turn off the flame.
    Vegetable pulao is ready to be served.
