Wash poha with water 2_3 times. Drain water and keep it for ten minutes. Cut onion, tomato, chillies. Potato into small pieces. Wash and Grate cucumber, carrot and keep it aside.

Heat oil in a pan. Add mustard, jeera, curry leaves and saute well. Then add chopped onion, chillies, carrot, potato, tomato, cucumber, peas and cook for two minutes. Add salt and turmeric powder. Add lemon juice and sugar and saute well. Add washed poha and mix well. Roast peanuts in a little oil and add to poha. Decorate with sev and chopped fresh coriander.
