Ingredients

2 servings
  1. 2-3 cupsfresh baby spinach leaves
  2. 1/4-1/2 cuproughly chopped walnuts
  3. 1/4-1/2 cupblack raisins
  4. 1big apple, cored and cut into thin slices
  5. 2 tablespoonssunflower seeds
  6. Honey-Lemon Dressing:
  7. 4-5 tablespoonsoil (any cooking oil or olive oil)
  8. 1 tablespoonlemon juice
  9. 1/2 tspsalt
  10. 1/4 teaspoonblack pepper
  11. 1 tablespoonDijon mustard
  12. 1-2 tablespoonshoney

Steps

  1. 1

    To make the Honey-Mustard dressing
    In a mason jar or any bottle with a tight fitting lid, add all the ingredients of the dressing.
    Close the lid tightly and shake the bottle to blend the dressing well.

    To make the salad
    In a large salad bowl, toss together spinach, walnuts, raisins and apples slices.
    Drizzle with the honey-mustard dressing and toss to coat evenly.
    Serve immediately.

    Notes:
    Have fun adding other colors and textures like cubed tomatoes or cherry tomatoes, some slice onions, cubed or sliced cucumbers or even some julienned carrots!
    Not fond of walnuts? Try pecans, cashew or even peanuts for the crunch.
    Add dressing and toss just before serving or the salad may go soggy.
    If you do not like raisins, add other dried fruits like dried cranberries, some chopped up dates or even some fresh pomegranate pearls.
