Remove excess fat from ox tail

heat oil in pan

add ox tail when oil is very hot

brown ox tail on all sides

place oxtail, beef stock and enough water to just cover in cooking pot, cover, simmer 3.5 - 4 hours

combine onion, garlic, allspice, carrots, thyme, tomato, escallion, salt and pepper

when tender add more water and add other ingredients

cover and simmer for 20 to 30 minutes

add butter beans

simmer uncovered til gravy thickens

add dash of tabasco
