Boil water; cook shrimp in shells just before coming to a second boil. Remove from heat and dunk in ice bath.

Drain shrimp, add olive oil, liquid smoke, crushed red pepper flakes and old bay. Stir. Chill for 15 min to 1 hour.

Reserve liquid seasoning. Peel and devein shrimp. Pour remaining seasoning liquid and serve.
