Ingredients

  1. 5 tbspolive oil divided
  2. 2 1/2 lbyukon gold potatoes
  3. 1 1/2 tspcoarse kosher salt
  4. 3/4 tspground pepper
  5. 1 1/4 cupheavy whipping cream divided
  6. 1 cupgrated parmesan cheese divided
  7. 2 tbspfresh chopped thyme
  8. 6 clovegarlic thinly sliced
  9. 12 ozcrimini (baby bellas)mushrooms

Steps

    Preheat oven 375°F

  2. 2

    Brush 13x9 glass dish with 2 tbsp oil

  3. 3

    Slice potatoes lengthwise 1/8th thick

  4. 4

    Slice garlic thinly.

  5. 5

    Slice mushrooms

  6. 6

    Arrange 1/3rd of potatoes slightly overlapping in a dish. sprinkle with coarse salt and pepper.

  7. 7

    Pour 1/3 cup of cream over.

  8. 8

    Sprinkle with 1/4 cup of cheese

  9. 9

    Repeat layering 2 more times

  10. 10

    Bake uncovered until potatoes are tender, adding cream if dry. about 45 min

  11. 11

    Sprinkle thyme and garlic slices over gratin.

  12. 12

    Toss mushrooms with 3 tbsp of oil. Sprinkle with salt and pepper

  13. 13

    Arrange mushrooms slices atop of gratin around edge of dish

  14. 14

    Drizzle with 1/4 cup cream, sprinkle with/4 cup cheese

  15. 15

    Continue to bake uncovered until mushrooms are tender and potato edges are golden brown about 20 minutes

    Can be made ahead one day

  17. 17

    Cool hour in dish and chill

    cut into 10 pieces And transfer to dish.

    Cover with foil and real in 350°F oven 10 to 15 minus
