Ingredients

10 servings
  1. 3 tbspolive oli
  2. 2carrots
  3. 1onion
  4. 2celery stalks with leaves
  5. 1fennel bulb
  6. 3dried bay leaves
  7. 6sprigs of thyme
  8. 3/4 lbborlotti beans
  9. 1 pinchsea salt
  10. 1 pinchfresh ground pepper
  11. 4 clovegarlic
  12. 2 quartchicken or vegetable stock
  13. 28 ozdiced tomatoes
  14. 2 cupsmall pasta
  15. 20fresh basil leaves

Steps

2 hours
  1. 1

    add diced carrots, onions, celery to preheated pan of olive oil

  2. 2

    add diced fennel

  3. 3

    strip the thyme overy pot and discard sticks

  4. 4

    add bay leaf

  5. 5

    saute 10 minutes

  6. 6

    add beans and grated garlic, stir

  7. 7

    add stock, tomatoes, salt, pepper and a drizzle of olive oil and stir

  8. 8

    stir, cover and boil for 1 hour until beans are soft

  9. 9

    add pasta and cook 5 minutes

  10. 10

    chop basil and add to pot

  11. 11

    stir thoroughly and serve
