Ingredients

  1. 1(3 to 3 1/2 pound) Cross Rib Roast
  2. 3 tablespoonsBalsamic Vinegar
  3. 4 clovesgarlic
  4. 2 tablespoonsfresh thyme leaves, removed from stems and chopped
  5. 2 tablespoonsfresh rosemary leaves, removed from stems and chop
  6. to tasteSalt,
  7. 1/4 cupolive oil

Steps

  1. 1

    Preheat oven to 450 degrees F.

  2. 2

    Brush the cross rib roast with the balsamic vinegar, making sure the balsamic vinegar gets into all the nooks of the roast.  Make a paste of the minced garlic, thyme leaves, rosemary leaves, salt, pepper, and oil oil.  Rub paste mixture well all over the roast.

  3. 3

    In a large roasting pan, cook the prepared roast for 15 minutes.  Reduce oven temperature to 350 degrees F. and cook an additional 50 to 60 minutes
