Spray large soup pot with cooking spray, heat over low heat

Add onions and celery, cover and cook for 2 minutes

Add garlic and cook for 15 minutes

Stir in tomatoes, corn, okra and potatoes. Add stock and bring to a boil. Reduce to a simmer, cook until potatoes are soft, about 30 minutes
