Ingredients

  1. 1 smallonion
  2. 3 stickcelery
  3. 1 tspgarlic
  4. 1 candiced tomatoes (14.5 oz)
  5. 4 cupcorn (20 oz)
  6. 3 cupsliced okra (18 oz)
  7. 2 mediumboiling potatoes, cubed
  8. 7 cupvegetable stock

  1. 1

    Spray large soup pot with cooking spray, heat over low heat

  2. 2

    Add onions and celery, cover and cook for 2 minutes

  3. 3

    Add garlic and cook for 15 minutes

  4. 4

    Stir in tomatoes, corn, okra and potatoes. Add stock and bring to a boil. Reduce to a simmer, cook until potatoes are soft, about 30 minutes
