add sugar, 1 tbspn at a time until sugar is resolved; beat on high after each tbspn.

ready pastry bag and #96 star tip.

pipe 1.5 in diam. cookies onto parchment 2 in apart.

bake at 225 for 45 to 50 min. or until firm.

Turn off oven. LEAVE IN OVEN FOR 1.5 HOURS; remove and finish cooling.
