24 hours prior to cooking, clean and wash chicken inside and out. Place in refrigerator uncovered to dry. Remove and allow chicken to come to room temp.

Put quartered orange, garlic clove, rosemary, bay leaves and black peppercorn inside cavity. Rub sea salt inside. Tie tight. Rub pink Himalayan salt on outside.

Preheat oven to 450°F. Place chicken in oven for 45 minutes or until browned.

At room temp, whisk stick of butter, honey and cayenne in bowl. Slather over chicken and return to oven at 400°F for 15 minutes.
