Ingredients

  1. 2LG jalapeños
  2. For the stuffing
  3. .4 lbssurimi, chopped fine
  4. .25 lbsbay shrimp, chopped fine
  5. 3 Ozshredded mozzarella
  6. Meat from 1.5 dungeness crab
  7. 1 tbsminced garlic
  8. 8 Ozcream cheese
  9. 1/2 tspwhite pepper
  10. 1/2 tspground mustard
  11. 1 tsprice vinegar
  12. Tempura batter, fairly thick
  13. 1/4 cupflour
  14. For the batter
  15. Tempura batter, fairly thick
  16. 1/4 cupflour

Steps

  1. 1

    Please look at the recipe for my monkey balls. Most of this is prepared for that recipe. If only doing a few jalapeños, please portion down considerably. This recipe makes 2 jalapeño bombs and 5 monkey balls.

    Heat cream cheese to room temperature. Mix all stuffing ingredients.

  3. 3

    Prepare the batter. Make tempura to specifications. Mix flour into it to make it super thick.

  4. 4

    Prepare jalapeños by cutting stem off, and in half lengthwise. Remove insides with a spoon. Try to use very large peppers.

  5. 5

    Stuff with stuffing. Pack in well.

  6. 6

    Heat deep fryer to 375 degrees. coat bombs with tempura. Let drip off. Slowly drop the bomb in oil, otherwise it will stick to bottom of fryer basket

  7. 7

    Cook about 4 to 5 minutes, they are done when batter is light golden brown.

  8. 8

    Remove from fryer and drain on paper towels.

  9. 9

    Serve with siracha aioli, wasabi, and soy sauce.

  10. 10

    Serve immediately, enjoy.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
