Crispy Cheese Topped Baby Potatoes

A simple way to give boiled potatoes a change, these were leftover so to transform them they were crisped up in butter and topped with cheese for a delicious side dish.

A simple way to give boiled potatoes a change, these were leftover so to transform them they were crisped up in butter and topped with cheese for a delicious side dish.

Slice cooked potatoes, add sriracha seasoning, salt and pepper, and mix in a bowl.

Add 1 Tbsp oil and 1 Tbsp butter to a skillet. On low to medium heat add chopped onions and cook until soft. Add garlic and cook an additional 30 seconds. Add remaining butter (2 Tbsp) to the skillet. After butter melts add sliced potatoes.

Over medium heat cook until golden brown.

Place on foil lined oven proof plate.

Sprinkle on Romano and cheddar cheese

Bake in a preheated 400° F oven until cheese melts. Serve and enjoy.
