Red Pepper and Tomato Rice
Good when you need to add some flavour to your meal :chef

Add 2 tbs oil and rice to pan and brown rice.

Remove once browned. Do not overcook.

Add 1tbs oil, onion, and garlic to hot pan.

Cook until Onions are transparent.

Put onions in a large stock pot. Add water and stock cubes.

Bring to boil.

Lower to simmer and add rice and cook for 15 minutes.

Add mixed veg and tomato paste and stir through for 5 minutes.

Remove from heat and add red peppers. Stir through and allow to sit for 5 minutes before serving.
