preheat oven to 375°F.

mix the seasonings and rub the ribs with the seasonings mix.

place water, bay leaf and beer in an shallow oven baking dish, 9"x9" works great. mix lightly

place the ribs in the pan on edge, large bone side down. cover tightly with aluminium foil

bake for 60 minutes.

remove from oven and let set to cool. remove the aluminum foil carefully. you will use it later.

lay out the aluminum foil and carefully lay the ribs on the foil and wrap. place on the grill using indirect heat. turning every 10 to 15 minutes.

cook until you can smell the ribs. remove from the grill and let cool.

after cool enough to touch, remove the foil and put the ribs on the grill and slather them with your favorite sauce.

continue until you have good caramel coating on the ribs. plate and enjoy.
