  1. 175 gramscaster sugar
  2. 175 gramsbutter
  3. 3 largeeggs
  4. 175 gramsself raising flour
  5. 1 tspbaking powder
  6. 1 canfresh dairy cream

    preheat oven to 180°c

  2. 2

    whisk together butter and caster sugar until light and flufft

  3. 3

    beat eggs in jug then gradually add bit by bit to mixture beating cinstantly

  4. 4

    sieve flour and baking powder together twice

  5. 5

    fold into mix with a metal spoon.do not beat or all air will be removed and cake will be flat

  6. 6

    share mixture between two baking tins lined with baking paper

  7. 7

    bake in oven for 15-20minutes .test if cooked by placing a knife into cake.if it comes out clean its cooked

  8. 8

    leave on to cool on wire rack

  9. 9

    when cake is cool spread jam on one side and then whipped cream on top

  10. 10

    put top onto cake and sprinkle with icing sugar

  11. 11
