Have all ingredients measured and ready. Prepare baking paper on a baking sheet

Combine sugar and honey in a small saucepan and cook over low heat swirling the pan until the sugar is melted, this will take 1-2 minutes. Don't be tempted to use a spoon to stir, the sugar will crystallize.

Increase heat to high and bring to the boil for 2 minutes which will colour the liquid rich, golden colour. Remove from heat, and quickly add bicarbonate of soda and swirl to combine. The mixture will puff up quickly.

Tip onto lightly oiled baking paper and leave until set. Break up into chards and store in an airtight container for a week.
