chop all the vegetables as well as possible.

fry chopped onion for 3 minutes and add tomatoes and sweet pepper.

add the sugar and salt

keep stirring. after the juices from the tomatoes have evaporated for about 5 minutes add all spices except parsley.

mix evenly, taste, and add spices if you like.

using a spoon, prepare a small "hole" for the first egg and brake it whole inside.

evenly space all the eggs in the frying pan in the same way.

cover the pan and let boil on low flame until the eggs are ready.

sprinkle chopped scallion on top

slice and enjoy! its nice when the eggs are a bit soft inside. serve with fresh hot pita and a bowl of tahini. great for brunch with a glass of freshly squeezed orange juice :-)
