Pear walnut cake (with cream cheese)

My colleagues at work asked me to bake a pear-walnut cake (see recipe here ) again. I wanted to make them happy, at the same time as I am still learning, I wanted to try a new recipe I had some spare cream cheese, so I decided to go for a variation of cream cheese pound cake which includes pears and walnuts! The cake was richer than the previosu version (butter instead of oil and added cream cheese) and ofcourse yummier! :D

Ingredients

  • 200Grams Flour
  • 1/4 TeaspoonBaking Soda
  • 1/2 TeaspoonBaking Powder
  • 1/2 TeaspoonCinnamon
  • 300 GramsSugar Powdered
  • 170 GramsButter
  • 110 GramsCream cheese
  • 3Eggs
  • 2Pear Large (chopped)
  • 60 GramsWalnuts (chopped)
  • 1 TeaspoonVanilla Extract

    Preheat oven to 170 degrees. Butter and dust with flour/icing sugar a 10 inch bundt pan.

    Mix the flour, baking soda, baking powder and cinnamon and keep aside.

  3. 3

    Beat the butter and cream cheese together until light and fluffy.

  4. 4

    Add sugar in three additions, beating well after each one. With the mixture running, add eggs one at a time. Mix in vanilla.

  5. 5

    Fold in the flour mixture. Add the chopped fruit and walnuts.

  6. 6

    Pour the batter into the pan evenly and bake for about 40 mins (could be more depending on your oven) or until a toothpick inserted into the pan comes out clean.
