Preheat oven to 350

beat eggs whites until stiff peak forms (castle)

add 150gm sugar to egg whites and keep same cosistency. Meanwhile make a thin syrup with the remainder of the sugar (200gm) and fold it into the egg white mixture, after it cools to give it a caramel colour.

grease bundt tube pan with butter and pour egg white mixture in it placing pan in preheated oven for EXACTLY 12 min then turn oven off but keep pan in hot oven for EXACTLY 10 more minutes then remove it to cool

mix the yolks, 150ml milk and the remaining sugar (150gm) and cook over medium heat until yolks are cooked and mixture boils. Let it cool then pour it over pudding.

put dessert in fridge until serving time
