  1. 3 cuppolk salad or spinach
  2. 1/4gatlic (fresh/minced)
  3. 1/4 cuponion
  4. 1 tspsalt/pepper to taste
  5. 1 dashoil/bacon dripings (best)
  6. 7 largeeggd

  1. 1

    if polk salad is fresh it must be cleaned and boiled then drained and boiled again and drained

  2. 2

    strain out as much of liquid as possible out of greens

  3. 3

    heat oiled skillet and saute onion and garlic in skillet

  4. 4

    add greens and saute for about6-8 minutes

  5. 5

    season to taste & add eggs to skillet and cook until eggs are mixed and fully cooked thru out greens
