  1. 12 ozsharp cheddar cheese, shredded
  2. 1 1/2 tbspcorn starch
  3. 12 ozbeer, preferably brown ale
  4. 5 ozevaporated milk
  5. 1 tbspDijon mustard
  6. 1 tspWorcestershire sauce
  7. 1 tsphot sauce
  8. 1 dashkosher salt, to taste

    Toss cheese with cornstarch in medium bowl; set aside.

    Whisk together beer, milk, mustard, and Worcestershire in saucepan. Hat over medium heat until gently steaming, whisking frequently to prevent scorching.

    When beer mixture is warm, add cheese, stirring until completely melted, bubbling slightly, and thickened. Stir in hot sauce and season with salt to taste; serve immediately.
