Ingredients

6 servings
  1. 1cooking spray
  2. 4 largeeggs
  3. 4 largeegg whites
  4. 1 cupnonfat milk
  5. 1 tspvanilla extract
  6. 5 cuppeaches, fresh or frozen unsweetened thawed
  7. 2 tbspbrown sugar firmly packed
  8. 1/4 tspground cinnamon
  9. 1 1/2 cupplain nonfat yogurt
  10. 3/4 cuppure maple syrup

Steps

  1. 1

    coat a 9 x 13 inch baking pan with cooking spray

  2. 2

    cut the baguette into one half inch thick slices and place them in a single layer in pan.

  3. 3

    in medium bowl, whisk together the whole eggs, egg whites, milk, and vanilla .

  4. 4

    pour the egg mixture over the bread in the pan

  5. 5

    scatter the peaches evenly over the bread

  6. 6

    sprinkle with brown sugar and cinnamon

  7. 7

    cover with plastic wrap and refrigerate overnight

  8. 8

    uncover and bake until slightly puffed and the bread is golden brown about 40 minutes

  9. 9

    oven to 350

  10. 10

    top with yogurt and drizzle with maple syrup

  11. 11
