1. add oil to a frypan and lightly brown the sausages. once done remove and set aside. cut into rough chucks and leave.

2. add onions and carrots to frypan and saute until onions are soft. add sausage chunks into pan.

add the flour and curry powder into the pan with a dash of the chicken stock, using a fork or small whisk mix together to form a paste. gradually add in remaining stock, stiring to combine (it should thicken to become saucy)

over a low heat bring to a simmer, mix in tomato sauce and add salt and pepper. stir well and leave to simmer for 10 mins, stir occassionally

serve with the rice and enjoy. it is also nice with mashed potato
