Ingredients

  • 1 lblarge shrimp (peeled, de-veined)
  • 2juice/zest lemons
  • 1 tbspgarlic
  • 1/4 tbspblack pepper
  • 1 tbspcapers
  • 1/2 cupparsley
  • 1/2 tspsalt
  • 1/4 cupolive oil

Steps

  1. 1

    poach shrimp until pink. cool on ice and drain

  2. 2

    whisk together lemon juice, zest, garlic, parsley, salt/pepper, olive oil, and capers.

  3. 3

    add them shrimp tossing well, refrigerate at least 1 hour before serving.
