Steps

Pre-heat oven to 180°C

carefully peel back skin of raw chicken but do not remove completely

Place 2 slices of cheese and spread 1tbsp of mustard in between skin and meat of chicken

Re-position skins so mustard and cheese are covered
- 5
Repeat for other fillet
- 6
Lay out 2 rashes of bacon on flat surface side by side, place fillet on top and roll up bacon, wrapping fillet

Tie up fillet with twine to ensure bacon is tightly compacted to chicken

Heavily coat with cajun spice
- 9
Transfer to a hot frying pan with 2 tbsp oil and fry to sear entire fillet. (approx 10 mins)

remove from pan and bake in oven until cooked (approx 20 mins)

Serve on top of Green beans and drizzle with a creamy garlic and/or pepper sauce
