Cooking Instructions

preheat oven 450°F
- 2
in a large bowl, place zucchini, summer squash, onion, mushrooms, and sweet peper. Add oil, salt, and black pepper, toss to coat.

spread vegitable mixture evenly in a 15x10x1 inch baking pan. roast uncovered in the preheated oven for 8 to 10 mins or until veggies are tender.

divide roasted veggies amoung pita bread halves, drizzle with salad dressing. top with shredded cheese. can place pitas on baking sheet and heat 2 or 3 mins.

Avocado veggie sandwiches. prepare as above except omit salad dressing. in a small bowl mash 1 avacado, halved, seeded, and peeled, wkth 1 tablespoon lime juice and 1/4 teaspoon salt, spread avocado mixture in pita bread rounds before filling with vegetables.

Lol! But I came up with a low-fat alternative. I used leftover ham we had from Christmas dinner. I do suggest only using 1oz. of meat per pizza though as that is where most of the fat will come from. And if you use olives, use only a Tbs. as they are also high in fat, a good fat, but still fat. Eat up and enjoy pizza again, your way! 😉 Living Without A Gallbladder
