
Golden polenta & egg with mustard sauce

Steps

cook polenta to the specification s on the back of the packet and allow it to cool in a shallow baking tray you can then cut it into a desired size
- 2
combine yogurt, mayonnaise, dijon mustard, lemon juice & water in a small bowl and combine
- 3
bring 6 cups of lightly salted wster to the boil and cook beans until just tender remove tge beans from the water do not dispose of water
- 4
return water to the boil and place eggs in to cook a soft boiled egg set the timer for 5 minutes for a hard boiled egg set the timer for 8 minutes

take your cooled pieces of polenta and place in a shallow frying pan and cook on each side until crisp and golden
- 6
cut your egg in half and place on top of your polenta slice once its been fried then add your beans on the side and drizzle with your dressing
