Ingredients

  1. 16 ozPace Picante Sauce
  2. 1/2 cupsour cream
  3. 2 tspchili powder
  4. 2 cupchicken, cooked and cubed
  5. 1/2 cupmonterey jack cheese, shredded
  6. 6flour tortillas, warmed
  7. 1green onion, thinly sliced
  8. 1 cancream of chicken soup
  9. chicken substitute
  10. 34.5 oz chicken breast in water, drained

Steps

  1. 1

    Preheat oven to 350°F.

  2. 2

    In medium bowl, stir together 3/4 cup picante sauce, sour cream, soup and chili powder.

  3. 3

    In a large bowl, mix picante mixture, chicken and cheese.

  4. 4

    Spoon about 1/3 cup chicken mixture down the center of tortillas.

  5. 5

    Roll up the tortillas and place seam side down in a lightly greased 11×8 inch baking dish.

  6. 6

    Pour remaining picante sauce over filled tortillas.

  7. 7

    Cover the baking dish with foil.

  8. 8

    Bake for 40 minutes or until enchiladas are bubbling.

  9. 9

    Top with green onion and more sour cream and cheese.
