  1. 350 gramsBeef sirloin, trimmed, sliced thinly
  2. 1/4 cupFish sauce, plus 1 tbsp extra
  3. 2 tbspLemongrass, finely chopped
  4. 2 tbspKecap manis
  5. 4 cloveGarlic, crushed
  6. 1/2 tspCastor sugar, plus 1 tsp extra
  7. 1/4 cupPeanut oil
  8. 2 largeEshalots, thinly sliced
  9. 2Red chillies, thinly sliced
  10. 100 gramsSnow peas, trimmed
  11. 2Limes, juice, plus extra to serve
  12. 1Coriander leaves, to serve
  13. 1Bean sprouts, to serve

  1. 1

    In shallow dish combine beef, fish sauce, lemongrass, kecap manis, 3 garlic cloves and sugar. Marinate 10 mins.

  2. 2

    Heat half oil in large wok on high. Working in 2 batches, stir-fry meat 1-2 mins until evenly browned. Transfer to plate.

  3. 3

    Heat remaining oil in wok on high. Stir-fry eshalot and garlic for 1 min. Return beef to wok with chilli. Stir-fry 1 min.

  4. 4

    Add snow peas to wok with lime juice, extra fish sauce and extra sugar. Stir-fry 1 min. Serve straight away, garnished with coriander and bean sprouts. Accompany with extra lime.
