Very tasty soup! Got the recipe from a weightloss program I was on and couldn't believe how great it was. I make up a big pot of soup and have it for lunches and teatime. :hungry

Ingredients

6 servings

700 gramsground lean beef
1/2 tspgarlic
1/4 tspcumin powder
1/4 tsppepper
1/2lemon, squeezed
1/2lemon, zested
1/2 cupcelery, chopped
100 gramscan kidney beans, drained
1/2 headcabbage, chopped
1 cupred capsicum, roughly chopped
2 largecarrots, chopped
1 cantomatoes chopped
1 canwater in empty tomato can
1 literof either vegetable or beef stock
1chopped parsley for serving

In a saucepan add a little oil and brown beef.

Add all remaining ingredients except parsley; bring to the boil.

Reduce heat and simmer. Cover for 1 hour. Garnish with parsley.

Serve with crusty roll.
