preheat oven to 425* set crust out about 10 minutes, until almost room temperature & slightly soft.

peel, core & dice apples. place in small bowl & toss in lemon juice. stir in brown sugar, cinnamon, ginger & nutmeg.

roll out dough into a 16 x 8 inch rectangle on a lightly floured surface. cut into eight 4 inch squares.

spoon 2 scant tablespoons of apple mix onto each square of dough. top filling with piece of butter. seal with egg wash & place on ungreased baking sheet.

don't overfill!! use leftover apple mix on ice cream, yogurt or oatmeal
- 6
brush tops with leftover egg & sprinkle with sugar. bake until lightly brown, about 10-12 minutes. cool on baking sheet 2 minutes, then transfer to wire rack to cool completely
