Ingredients

  • 12 ozlinguine noodles
  • 1 candiced tomatoes (15 oz)
  • 1 largesweet onion, cut into julienne strips
  • 4 clovegarlic, thinly sliced
  • 1/2 tspred pepper flakes
  • 2 tspdried oregano leaves
  • 2 largesprigs of basil, chopped
  • 4 1/2 cupvegetable broth
  • 2 tbspolive oil, extra virgin
  • parmesan cheese

    Place pasta, tomatoes, onion, garlic, basil in a large stock pot.

  2. 2

    Pour in vegetable broth. Sprinkle on top the pepper flakes and oregano. Drizzle top with olive oil.

  3. 3

    Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated. Leave about an inch of liquid in the bottom of the pot.

  4. 4

    Season to taste with salt and pepper, stirring pasta several times to distribute the liquid in the bottom of the pot. Serve garnished with parmesan cheese
