Ingredients

  • 2 cupgranulated sugar
  • 1 cupvegetable oil
  • 3large eggs
  • 3 tspvanilla
  • 2 1/2 cupflour
  • 1/2 cupcocoa powder
  • 1 tspsalt
  • 1 tspbaking soda
  • 1 tspground cinnamon
  • 1/4 tspbaking powder
  • 2 cupshredded zucchini

Steps

  1. 1

    Preheat oven to 350°F.

  2. 2

    In a large bowl, beat eggs, oil, sugar, and vanilla.

  3. 3

    Mix in remaining ingredients, blending until smooth.

  4. 4

    Pour batter into 2 lightly greased loaf pans and bake for 50-55 minutes or until a toothpick inserted into center comes out clean.
