Ingredients

  1. 4 eachmedium zucchinis
  2. 1/2 cupmild salsa
  3. 1 lbground turkey
  4. 1 tspgarlic powder
  5. 1 tspcumin
  6. 1 tspsalt
  7. 1 tspchili powder
  8. 1 tsppaprika
  9. 1/2 tsporegano
  10. 1/2 eachsmall onion
  11. 2 tbspbell pepper minced
  12. 4 ozcan tomato sauce
  13. 1/4 cupwater
  14. 1/2 cupcheese shredded
  15. 1/4 cupcilantro or scallions

Steps

  1. 1

    Bring large pot salted water to a boil. Preheat oven to 400°F. Place 1/4 cup salsa in bottom of baking dish.

  2. 2

    Hollow out center of zucchini. Chop up flesh and squeeze out excess water. Drop zucchini halves in boiling water and cook 1 minute.

  3. 3

    Brown meat. Add spices and vegetables plus sauce. Cover and simmer about 2 minutes.

  4. 4

    Fill zucchini about 1/3 cup each. Top with cheese. Cover with foil and back 35 minutes.
