2 cupsugar
2 gallonwater
3 eachoranges
4 eachlemon
8 clovegarlic
4 eachbay leaves
1 tbsppeppercorns
1 bunchfresh herbs (thyme, rosemary, oregano)

In a large stockpot, add 1 gal water with sugar and salt; simmer over medium heat. Allow sugar and salt to dissolve

Add 3.5 lbs of ice to brine and add Turkey.

Pour another gallon of water (or orange juice) to the mixture and submerge the bird. 1 hour per pound.
