mix 1 cup of all purpose flour and the salt. In a separate bowl mix ice cold water with olive oil. Add to the flour and stir with a fork until it forms a soft dough. Hands are the best for this. If u feel the dough is a little sticky sprinkle a little more flour not too much though the consistancy should be soft semi oily

preheat oven to 200 c

heat stove on medium heat. Put 3 tbs of butter and the crushed garlic. Add in the onion and mushrooms together once garlic and butter starts to sizzle

In a bowl mix 4 eggs and beat well. Add the crumbled feta cheese, the chedder and the milk. you can use cream but this will make the dish very heavy. Add in the mushrooms and onion. Stir

once the mushrooms have become tender and soaked in most of the butter , turn off heat

grease your oven dish then press your dough into an oven dish of your choice, making sure the dough reaches 2 cm on the sides of the dish , I used a regular cake tin as I wanted a heart shape.

Add In the filling and place in oven for 15 mins on 200 c and reduce to 180 c for 45 minutes or until the quiche is cooked through and golden brown in colour

best served with a side dish of balsamic green salad
